3. 2-in-1 Ramen at Miyasaka Shoten, Nagano Prefecture

With worn wooden planks making up its rustic exterior, Miyasaka Shoten can be easily overlooked if it was not for a life-sized Ultraman that stands guard at the entrance.

Residing in Saku city for 19 illustrious years, the Japanese restaurant offers a cool dining concept where the space is segregated into two parts: an open kitchen serving up tendon bowls and a ramen noodle bar. So not only can diners savour delights from the two options, they can also witness culinary performances of tendon frying and ramen making.

While the tendon bowls were recommended, we simply couldn’t pass on this innovation of a 2-in-1 noodle dish. Served in a nifty bowl, we slurped up ramen noodles that were soaked in two addictive broths – shoyu and salt. The verdict? Let’s just say that this single meal alone had our ramen cravings sorted for the rest of the trip.
