The latest food craze to hit our shores is the Castella Cake, a popular Japanese sponge cake of Portugal origins, made from a simple selection of ingredients including sugar, flour and eggs.

Derived from the Portuguese name Pão de Castela, meaning "bread from Castile", these cakes are loved for their fluffy and light-as-air texture.

Inspired by the popular egg sponge cakes originating from Tamsui (Danshui), Taiwan, Chef Jim of Ah Mah Homemade Cake has adapted the traditional recipe and put a local twist on it.

The cakes are freshly made every day on the spot with each batch baked for 80 minutes, resulting in a light yet soft texture.

Consider their cakes to be a slightly healthier option as they’re made with purely with milk, grade AA eggs and quality flour, with no added preservative.
