First soaked for three days in a homemade sauce comprising superior soya sauce, rock sugar and five-spice, the foie gras is cubed and served chilled atop a blueberry compote comprising blueberries, cranberries and a hint of white wine and lemon juice. The compote, with its fruity flavours, delicately balances out the richness of this pâté.
