Recipe: Chinese Eggplant Salad By Asian Food Channel

Simply fragrant and easy to cook, this Chinese-style brinjal salad will be your next go-to dish!
Serves 2 people
- 2 Asian eggplants (brinjal)
- 2 green onions
- 6 cloves garlic
- 1 large red chili
- 1 sprig coriander leaves
- 1 Tbsp chili oil
- 1 tsp sesame oil
- 1 tsp soy sauce
- ½ tsp salt
- Vegetable oil
Step 1 – Slice eggplants
- Slice eggplant into 3 inch pieces. Season with ½ tsp salt.
