Open Door Policy’s new menu offers contemporary comfort food without the guilt

Arguably one of Tiong Bahru’s best haunts, Open Door Policy has made a name for itself thanks to its rustic charm and simple, comfort food.
Now, there’s even more reason to pay a visit. Its recent concept refresh presents a gluten-free and dairy-free menu, thanks to Spa Esprit Group’s push for green initiatives.
Lest you think ‘gluten-free’ and ‘dairy-free’ are merely buzzwords thrown around in a bid to sound healthier, rest assured that the bistro takes them pretty seriously.
First of all, the menu taps into the chefs’ knowledge of alternative food sources, substitute ingredients and pickling know-how, resulting in a light and nutritious menu that’s suitable for even those with food allergies.
Secondly, the walls feature indoor vertical farming panels where leafy greens are grown in-house for the new dishes.
We ate our way through these sustainable yet delicious dishes and here are six of our favourites:
1. Quinoa Salad ($20)
What looks as pretty as a garden is merely the Quinoa Salad, which features fermented root vegetables, garlic soil and garden herbs. The crunchy and zesty quinoa paired wonderfully with the naturally sweet greens.
