3. Ramen Lab

While ramen bars are a dime of a dozen in multicultural New York, it’s no easy feat finding an authentic bowl of ramen.

Enter Ramen Lab, a ten-seater restaurant in Lower Manhattan, which is reminiscent of Japan’s traditional ramen-yas. At this made-to-order standing ramen joint, only one kind of ramen is served each day. The menu changes periodically accordingly to the guest chef visiting.

Once, we had ‘Tanmen’. Chewy ramen noodles were soaked in a rich seafood broth and complemented the accompanying ingredients well.
