As Singaporeans lament the fate of heritage hawker stalls after the passing of icons like Mr Thomas Ng Ba Eng of Eng’s Noodle House, the spotlight has shifted to that of hawkerpreneurs.
Young and vivacious, these young chefs have no qualms about hanging up their suits for greasy aprons, giving new hope to the dying hawker trade.

Heritage Malay & Indian fare
One of them is Daniel Surendran from Heaven’s Indian Curry, which started as a humble hawker stall at Ghim Moh Road Market and Food Centre more than 15 years ago by Mdm Letchmi Veerapan.
Today, it remains as one of the few establishments where you can have a taste of putumayam (string hoppers) and appam (crispy-edged pancakes with a fluffy centre) made from scratch.
Enjoy putumayam (string hoppers) with traditional orange-hued sugar and freshly grated coconut.
29-year-old Daniel Surendran has since taken over the time-honoured and laborious craft from his mother, taking two months to perfect the art of extruding rice flour dough into gossamer threads that come together in light and fluffy pancakes.
Now, you can have a taste of these heritage pancakes at the Fullerton Young Hawker Series, a dining collaboration between Town restaurant and third generation hawkers who are preserving the legacy of various heritage dishes.
Diners can also tuck into savoury dishes like Penang Curried Beef.
Sweet & savoury
Following two successful guest stints at Town restaurant, Daniel Surendran from Heaven’s Indian Curry will return from 4 to 14 Jan to feature a selection of traditional handmade Malay and Indian fare.
Apart from enjoying putumayam (string hoppers) with traditional orange-hued sugar and freshly grated coconut, diners can also tuck into savoury dishes like Penang Curried Beef as well as Prawns and Quail’s Eggs in Red Lemak Gravy.
Another highlight is The Royal Thosai.

The Heaven’s Young Hawker Series showcase takes place from 4 to 14 Jan, 6.30 to 10:30pm from $56 per adult and $28 per child (6 to 11 years old).
The dinner buffet also includes a local spread with favourites such as Laksa (rice vermicelli in spicy coconut gravy) as well as Town restaurant’s famous Hainanese Chicken Rice, which has earned its reputation as one of the best Chicken Rice in “Town”.
