This is a lovely mutton curry which is slightly tart and sour and gets its added bouquet from the tomatoes and whole green chillies. A touch of yoghurt, added at the end of the cooking time, gives it a rich creamy texture.
Frozen mutton, readily found pre-cut in supermarkets, is a convenient, affordable and tasty choice.
Ingredients
- 500g Frozen lean mutton meat
- 4-6 tbsp Vegetable oil
- 2 Large onions, peeled & pounded
- 2 slices Ginger, pounded
- 3 cloves Garlic, pounded
- 3 Limes, squeezed for juice
- 2 tbsp Tomato puree
- 4 tbsp Water
- 3 Green chillies, sliced halfway down the length
- 3 Tomatoes, cut into 4 each
- 5 Potatoes, cut into large pieces (optional)
- 4 tbsp Meat curry powder (mixed with 6 tbsp water)
- 3/4 tsp Salt, to taste
- 6 cups Water
- ½ cup Yoghurt (optional)
Method
1. Cut meat into large cubes. Wash and blanch in boiling water for 3 to 4 min (Pic 1). Drain and keep aside.
2. In a pot, heat oil and fry onions, garlic and ginger.
3. Add the curry powder paste (Pic 2) and fry for about 4 to 5 min until fragrant. Then add the meat.
4. Add lime juice, tomato puree, 6 cups water and all the other ingredients (Pic 3) except for the potatoes and yoghurt. Simmer between 2 and 3 hours, or until mutton is semi-tender.
5. Add the potatoes, and yoghurt if desired, and simmer until the potatoes are tender.
6. Serve with rice or chunks of French bread.

- When handling meat, use separate cutting boards and utensils for raw meat and cooked food.
