Esquina’s Head Chef Carlos Montaobbia has given love expressions a culinary identity with his one-night-only ‘Stages Of Love’ Valentine’s Day Eight-Course Set Menu ($108 per pax). Available for dinner on 14 February, the romantic gastronomy features Captivation – a medley of scramble egg, caviar and uni, Coupling – an eel and mussels combi to represent the masculinity and femininity respectively, and Completeness – a sweet dessert of lychee, rose and raspberry to represent everlasting love.
