Cured in salt, sugar, lime, orange and lemon zest, the delicate flavours of tuna are brought to life in this moreish appetiser.

The dish offered bright and zesty flavours thanks to its citrus dressing, while textural elements like spring onion, cucumber, puffed saffron rice offer a nice crunch.
