After navigating a long winding path on the second floor of One Fullerton, I found myself at the stunning UsQuBa.

The modern European grill and whisky bar has recently refreshed its menu, shifting its gaze from purely Scottish cuisine to a broader and decidedly more experimental European menu.

Regulars at the coveted watering hole will be pleased to know that UsQuBa's enviable collection of illustrious single cask whiskies from famed Scottish distilleries and independent bottlers, remain a mainstay.

Seated by the window where ample natural light streamed in, I was blessed with a bird's eye view of Marina Bay, leaving me curious to see how the scenery would be once night falls.

Here, a symphony of thoughtful food and whisky pairings await, with the following being our favourites:

4. Pacific Tooth Fish and Truffle Pork Ragout ($36)

While no whiskey was involved in this dish, pairing or otherwise, it won our hearts with its contrasting flavours.

Pork and fish may be strange bed buddies but the mild and meaty pacific tooth fish perfectly complements the caramelised sweetness of the truffle ragout.

Wedges of skin-on potatos on the side added an earthy taste, completing the entire dish. We loved it.
