Remember how as kids, we ignored the gross shredded vegetables to pick out all the crackers when it came to yu sheng? Well, time flies, taste buds have matured and you are old. Yu sheng's amalgamation of the strikingly colourful ingredients that was loathed before, we now love and actually look forward to when the Lunar New Year comes striding in.

7. Masterpiece Yu Sheng ($999), Jade at The Fullerton Hotel Singapore 

Because splurging during this auspicious period will mean reaping tenfolds in the future (we think), Jade’s Masterpiece Yu Sheng is one extravagant and elaborate platter to rein in the luck. What you see is the craft of Chinese Executive Chef Leong Chee Yeng, who has painstakingly created an intricate Pekingese dog out of carrot shreds. The dog is said to resemble Chinese guardian lions which are not only favoured by the Chinese Imperial Court, but also considered as bearers of good fortune. So how much effort is needed to make this? We’re not too sure but you have to order the yu sheng at least three days in advance.
