Remember how as kids, we ignored the gross shredded vegetables to pick out all the crackers when it came to yu sheng? Well, time flies, taste buds have matured and you are old. Yu sheng's amalgamation of the strikingly colourful ingredients that was loathed before, we now love and actually look forward to when the Lunar New Year comes striding in.

But if this customary dish ever starts losing its appeal, we have compiled a list of 10 yu sheng that sport a creative twist to make your mouth water once more.

2. Prosperity Salmon and Abalone Yu Sheng ($168), Min Jiang at Goodwood Park Hotel 

It is a pity that the handpainted scene of a friendly Pekingese set against a majestic mountain will be later ruined by the convivial tossing of Min Jiang’s Prosperity Salmon and Abalone Yu Sheng. Drawn by the restaurant’s Master Chef Chan, the colourful illustration, which has raw salmon slices and abalones arranged to depict a sunset, will get cameras snapping away before a medley of fresh vegetables such as wild arugula, yellow frisee, and radish is laid out to the chants of auspicious phrases.  For that indulgent twist, strips of fried sweet potato and yam are added into the mix, before a tangy dressing of lime juice, lemongrass and plum sauce binds everything together.
