Hashida Sushi has returned – bigger and better – to a brand-new location in Mohamed Sultan Road! Renowned for their omakase-style Edomae sushi and innovative dishes, the refreshed Hashida Sushi also houses a dedicated bar, with head chef Kenjiro “Hatch” Hashida’s personal sake & spirits selection!
Chef Hatch (pronounced as Haa-chi) is a graduate of Japan’s top culinary school, L’Ecole Tsuji Tokyo; and traditionally trained – but you’ll see in the various dishes and omakase menu the spirit of creativity and adventure that shines through. Indeed, Chef Hatch has been so successful that he has restaurants scheduled to be opened this year or the next in Japan!
Hashida Sushi offers a Lunch Menu (from S$80), as well as Chef’s Omakase Lunch (from S$300), while it’s only Chef’s Omakase (S$300-500) for dinner. Go for the set lunches if you prefer being in the know of what’s going to be on your plate – the food is definitely going to be excellent, of course – but the highlight here at Hashida is undoubtedly the omakase-style sushi! Just let the friendly chefs know your dietary preferences and/or requirements, set your budget, and you’re good to go!
Our first set of starters was a gorgeous, carefully-plated combination of broad bean cold soup, spinanch marinated in dashi, Japanese pumpkin, and whelks; reminiscent of a zen, traditional Japanese rock garden. Refreshing and light on the palate, this was the perfect platter to start our meal off with!
Some of the various sushi we had include the golden eye snapper sushi, marinated tuna sushi, ootoro sushi, as well as the monk fish liver. The latter, one of Hashida’s signature dishes, is a wonderfully tender, grilled morsel bursting with flavour; while the snapper was light and lovely. We especially liked the flavour and fluffiness of the rice!
While we’re on the topic of sushi, don’t forget to dip yours into Hashida’s house-made soy sauce! Specially made by Chef Hatch himself, the exact recipe is a closely-guarded secret, with the sauce brewed using traditional methods and materials so as to retain its nuanced flavours. Be sure to taste it on its own, as well as with the various sushi – you won’t regret it.
In between the courses of sushi, we were served a palate cleanser of ginger juice mixed with watermelon, pineapple, berries, and topped with cucumber – it may not seem like it, but all that sushi rice does get filling!
Yet another gorgeous dish, a platter of chutoro, flounder, and mackerel sashimi, paired with sea cucumber, plum sauce, and wasabi skin simmered in soy sauce.
Perhaps our favourite of all the sashimi – the otoro! Sweet, tender, and melt-in-your-mouth delectable, we couldn’t help but crave for more.
With fresh seafood, exquisite dishes, and creativity abound; Hashida Sushi is definitely the place to go to indulge your Japanese food cravings. Even if it’s a little on the pricey side – sometimes, you just gotta treat yo’self, and in this case, Hashida’s omakase-style sushi is that treat for you.
