Recipe: Chinese Eggplant Salad By Asian Food Channel

Simply fragrant and easy to cook, this Chinese-style brinjal salad will be your next go-to dish!

Ingredients

Serves 2 people

  • 2 Asian eggplants (brinjal)
  • 2 green onions
    Finely sliced
  • 6 cloves garlic
    Sliced
  • 1 large red chili
    Sliced
  • 1 sprig coriander leaves
    Sliced
  • 1 Tbsp chili oil
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • ½ tsp salt
  • Vegetable oil

Step 1 – Slice eggplants

  • Slice eggplant into 3 inch pieces. Season with ½ tsp salt.
