Bringing local cocktail and bar snack culture to a whole new level

Running from October to 30 April 2019, Destination Singapore Beach Road launched a brand new bar menu at the Lobby Bar and Folklore— showcasing Asian-inspired cocktails created by Zac Mirza of Kult Kafe – pioneer of cocktail culture in Singapore and moreish heritage bar snacks by Chef Damian D’Silva of Folklore.

Bloody Belacan, Dill & Tonic, Kult Julep

Introducing the Bloody Belacan – the savoury piquant cousin of Bloody Mary – with flavours deepened by chef’s piquant sambal belachan, including Italian basil, Worcester sauce, salt and pepper, lemon juice, vodka and tomato juice.

The Dill & Tonic is a herbaceous spin on the classic gin and tonic, while the Negroni-inspired Kult Julep is made up of rum, fresh lime juice, kaffir lime leaves and gula melaka, making for a versatile floral cocktail that pairs well with food.

While one’s thirst is quenched by the refreshing drinks, the appetite is satiated with moreish bar bites specially created by Chef Damian. Making its “succulent” entrance to the bar menu is the eponymous Kong Bak Bao ($18.00), featuring juicy, flavourful slabs of braised pork belly clad in a steamed soft white bun.

Crispy chicken wings are ever-popular accompaniments to drinks and Chef Damian raises the bar with the Crispy Kepak Kencur Wings ($15.00). Don’t miss out on the Kueh Pie Tee ($12.00) and Baked Sambal Buah Keluak ($20.00) too!

Kultails are available at Folklore and Lobby Bar, while bar snacks are available at Lobby Bar from 3.00 pm to 9.30 pm.
