Spathe is no longer merely a term for a blossoming plant. Spathe Public House specialises in helping your appetite bloom

By Cheryl Chia

If you’re looking for a new spot to graze during your next makan session, give Spathe Public House a try for a touch of European communal dining.

Spathe – pronounced as spey-th – is based on the philosophy that good food is meant for sharing, with most of its creations coming in mammoth portions to feed hordes of family and friends. Chef Claudio Sandri – originally from Switzerland – brings his European sensibilities to the menu.

Mohammed Sultan Meter Dog

Start off with a light Hawaiian-inspired ceviche, Yellowfin Tuna Poke (say po-keh) ($18) with tangy shiso-yuzu vinaigrette and avocados on tuna sashimi chunks topped with crispy shallots for an Asian touch. Fans of foie gras can add a pan-seared slice to the Confit Duck Puff ($18-$38) that is filled with caramelised onions and shredded duck.

Order the head-turning Mohammed Sultan Meter Dog ($18-$55) featuring a whole metre-strip of veal and chicken curry wurst with wasabi mayonnaise and caramelised onions, nestled in a sweet bun. If you alone can finish it in 10 minutes, you eat for free.

Even their alcoholic beverages are served in “Social Pitchers”. Try their Watermelon Lemonade ($55) that is chock full of fresh watermelon, lemonade and soda with lashings of vodka. Mint leaves are also thrown in for a touch of freshness. Their Spathe Special ($58), a luscious concoction of chocolate, espresso, Bailey’s Irish Cream, crème de cacao, Frangelico and Myer’s Dark Rum, is also another one to try if you like your liquor sweet.

End your meal with a light Poached Pear Charlotte Royal ($11), a Madagascan vanilla custard topped with poached pears and surrounded by a wall of panettone. The entire sculpture sits in a shallow pool of warm chocolate sauce for a highly comforting yet light dessert.
