This weekend, from 8 to 10 July, Bedrock Bar & Grill will be hosting guest Chef Jay McCarthy for a Texas Meat Feast.
Once named the best chef in San Antonio, he will be delivering a unique culinary experience that best exemplifies the native flavours of Texas.
While diners will find the usual suspects like ribeye, tenderloin and even tomahawk, Chef Jay’s speciality is in the preparation of underutilised cuts of beef, including chuck and round cuts.

Uncommon cuts and classic sides
The Chuck Flap Steak ($38), fired by aromatic wood coals, takes the spotlight with its tender yet muscular texture.
Another must-try is the Bacon-Wrapped Jumbo Shrimp ($48), where the smoky, umami flavour of the bacon pairs perfectly with the meaty shrimp.
A timeless favourite executed well is the Classic Crab Cakes ($32), served with tangy chipotle aioli.
Possibly one of the best crab cakes I’ve had.
Fresh chunks of naturally sweet crab meat is what you’ll find in every bite — in the words of the chef, “More crab than cake.”
Over all, I had a thoroughly enjoyable meal. It was an education in uncommon beef cuts and a luxurious treat to remember.
