Recipe: Rockit Apple Steam Pudding

Steamed Pudding made using New Zealand Rockit apples

Ingredients

5 Rockit apples

½ cup sugar

1 pinch ginger powder

1 pinch nutmeg

1 pinch cloves

200 g butter

200 g soft brown sugar

3 free range eggs

50 g molasses

350 g all-purpose flour

2 tsps baking powder

Directions

  1. Peel and quarter the apples
  2. Caramelize the apples with sugar till soft and arrange in the floured and buttered molds
  3. Cream the brown sugar and butter, slowly add the eggs
  4. Fold in all dry ingredients and spices and finally the molasses, mix until well combined
  5. Place batter on top of the apples to fill the mold 3/4
  6. Cover with foil and steam for 8-12min or until a skewer comes out clean
  7. Serve with NZ Ice Cream
