Restaurant Review: SPRMRKT Serves Dangerously Good Spiked Milkshakes At Its New Bukit Timah Abode

Alongside other mouth-watering culinary creations

While no boys came to the yard, the Spiked Cookies & Cream Milkshake ($16) from SPRMRKT was (dang right) still better than the most we tried so far. Touting a balanced creamy consistency studded with a smattering of oreo crumbs for nibbles, the luscious milkshake deceptively conceals its inner troublemaker – a splash of cream liquor.

Now sprightly and slightly light-headed, we can only look forward to what’s to come at SPRMRKT’s new digs.

Bittersweet as it may seem with the closing of its six-year-long outlet at McCallum Street, SPRMRKT has since moved and settled comfortably in Cluny Court, bringing along its multi-concept experiences the restaurant has been lauded for. If you haven’t already known, aside from being a venue to wine and dine, the industrial-designed space doubles up as an art gallery with a dedicated retail section filled with home and lifestyle products.

As far as the food is concerned, SPRMRKT’s menu is pretty much headed towards the same simple, hearty, holistic-ish culinary direction as displayed by its Robertson Quay counterpart and McCallum predecessor. This is proven by some newly-created dishes that not only reflect robust Southeast Asian flavours, but also comprise nourishing ingredients such as quinoa and brown rice.


SPRMRKT Florentine ($19)

So, nourish up, we should, with the Salt Baked Beetroot with Anchovies ($20) for an immune-boosting Vitamin C. Never mind that the paper-thin beetroot slices are salted to a suspiciously delicious level, baked and then laid on a doily of fattening sour cream. Our vegetable intake for today, we convinced ourselves, before promptly moving on to the millennial-pleasing SPRMRKT Florentine ($19) that serves two jiggly sous-vide eggs laid on housemade organic quinoa cakes. Quinoa is good for you, we declared, shoving spoonfuls of the grains, now gloriously moist with the runny yolk and hollandaise sauce, into our face holes.

Slow-Braised Pork & Goji Berry Bow ($20)

Still on the topic of complex carbs, the Slow-Braised Pork & Goji Berry Bowl ($20), ordered from a selection of SPRGRN Bowls, also fitted to our sudden lifestyle change of healthy eating, thanks to its hearty base of brown rice, punctuated with a fistful of wolfberries for their medicinal benefits – but of course.

Spicy Prawn Linguine ($25)

Since we’ve been somewhat good three dishes ago, we rewarded ourselves with the delightful Corn Fritters ($9) where each crispy golden pillow tears open to reveal a party mix of corn kernels, spring onions, shallots and green chilli, further elevated by the accompanying Cuka sauce, a piquant Indonesian style spicy vinaigrette.

Still deluded by our swelling self-entitlement, we pleaded for pasta and it arrived in the form of the Salted Egg Carbonara ($23) and Spicy Prawn Linguine ($25). While the former was better off as carbonara on its own, we found the latter a fitting gift for all our ‘hard work’ with its harmonious spicy-sweet base of sambal belachan and housemade tomato sauce that cloaked every strand of linguine. Topping the pasta are massive Tiger prawns that are decadently seared with butter for just the sake of it.


Caramelised Banana and Gula Melaka Soufflé ($18)

As a final act of self-gratitude, we ever so gently split open the Caramelised Banana and Gula Melaka Soufflé ($18), releasing wispy ribbons of steam from the piping hot gooey centre of gula melaka batter and caramelised banana slices. Ladies and gentlemen, SPRMRKT has successfully localised the French soufflé. And on that note, we can’t wait to start eating healthy all over again.
