Violet Oon’s Recipe: Christmas Carrot Fruit Cake

#104_food_violetoonOur local poultry farms produce a wide variety of eggs such as eggs with Beta-Carotene, Organic Selenium, lower cholesterol or Omega-6. But whichever you choose, all locally-farmed eggs are delivered at its freshest as a shorter delivery time yields fresher and quality eggs.

INGREDIENTS

  • 3 cups Plain flour • 1 tbsp Cinnamon powder • 1 tbsp Baking powder
  • 1 tsp Fine salt
  • 1 ½ cups Corn oil
  • 6 Eggs, lightly beaten
  • 3 cups Grated carrots
  • 375g (1 can) Pineapple rings, cut into pieces
  • 350g to 500g Fine sugar (to taste) • 90g Desiccated coconut
  • 500g Mixed dried fruits

To Decorate

  • 20 Red glace cherries, cut into 4 each
  • 20 Green glace cherries, cut into 4 each

Method

1. Pre-heat the oven to 175oC for 10 min.

2. Sift the flour with the cinnamon powder, baking powder and salt (Pic 1).

3. Mix the eggs, corn oil, carrots and pineapples in a large mixing bowl with a spatula (Pic 2).

4. Add sugar and desiccated coconut.

5. Then add flour mixture and dried mixed fruits (Pic 3). Stir well with the spatula. The batter should be wet (Pic 4).

6. Spoon into cupcake moulds. Fill up to 2/3 full for each mould.

7. Decorate the top with the red and green glace cherries (Pic 5).

8. Bake in pre-heated oven for 20 to 30 min until the cake is cooked. Test with a toothpick to see if the cake is cooked through.

Note: If you are baking a large whole cake in a round cake tin measuring around 20cm (8 inches) you will need to bake for a total of 1 h 10 min to 1 h 20 min.

Test with a toothpick or satay stick by poking into the centre of the cake. If the toothpick comes out clean, the cake is cooked. If there is still batter sticking onto the toothpick, then the cake has to be baked a further 10 to 15 min.

 

Food Safety Tips

  • Cook your food well and not partially as this increases the risk of bacterial growth.
  • Do not buy eggs that are cracked as bacteria may have entered.
