These hormone-free Sakura prawns definitely make a dish the whole family can enjoy. Bring out their natural sweetness with this spicy and piquant recipe by Chef Thomas Chiam, a consultant to Sakura prawns

Ingredients

• 500g of shelled Sakura prawns
• 1 fresh mango, cut into cubes
• 1 sliced fresh red chilli padi
• 1/2 white onion, cut into cubes
• Some capsicums, cut into cubes

Method

1. Cut a small line along the back of the prawn to de-vein.
2. Heat up the olive oil in a frying pan. Then, add onions and chilli padi, and fry on high heat for 3 minutes.
3. Add in the prawns and stir-fry until the prawns turn red.
4. Add mango cubes, sprinkle with salt and pepper. Stir-fry for 5 seconds.
5. Serve on plate and garnish with the colourful capsicums.
