Recipe: Spicy Tofu Soup by Asian Food Channel

A delicious comforting soup that is full of umami flavour and goodness.

Ingredients

Serves 4-6 people

  • 300 g soft tofu
    Cut into big chunks
  • 110 g clams
  • 6 medium prawns
  • 100 g enoki mushrooms
    Bottom stem removed
  • 45 g oyster mushrooms
  • 2 small shiitake mushrooms cleaned
    Stem removed and thinly sliced
  • 1 stalk spring onion
    Thinly sliced diagonally

Soup base

  • 1 anchovy stock cube
  • 3 dried kelps
  • 1-litre water
  • 1 Tbsp cooking oil
  • 1 Tbsp Korean chili flakes
  • 1 tsp minced garlic
  • 1/2 tsp soy sauce
  • ¼ tsp black pepper

  • Add tofu and mushrooms and leave to cook. Turn heat off.

(Apart from prawns, you can use cuttlefish, mussels and slices of fish.)
