This Filipino chicken stew’s name literally translates to ‘pineapple chicken’. Try out this tangy dish at home!
Serves 4 people
- 1 kg chicken (Boneless leg-thigh, diced)
- 3 tomatoes
- 1 carrot
- 125 ml evaporated milk
- 3 Tbsp garlic
- 1 whole onion
- 1 can pineapple chunks
- 1 green bell pepper
- 1 red bell pepper
- 100 g cashew nuts
- 1 Tbsp vegetable oil
- 3 Tbsp fish sauce
Step 1 – Marinate Chicken
- In a bowl, add chicken and pineapple juice from the can.
- Set aside to marinate for 30 minutes, then drain, reserving the juice, and set aside.
