Never skip breakfast again with this easy-to-make and nutritious treat

If you thought missing breakfast wasn’t a big deal, you could be terribly wrong. Not only does a nutritious breakfast kickstart our body’s metabolism, it also restores glucose levels, an essential carbohydrate needed for the brain to function.

According to Lynette Lee, Kellogg’s Director of Nutrition & Regulatory Affairs, one should always try to have breakfast even if we’re starved for time.

Her go-to breakfast is a bowl of cereal, a typically low-fat and nutrient-dense food with many essential vitamins and minerals as well as dietary fibre.

Plus, cereal also provides the important benefits of grains, usually at less than 200 calories per serving. Just don’t pick a cereal that’s laden with sugar!

Ingredients

  • 120g top flour or plain flour
  • 2 teaspoons baking powder
  • 4 tablespoons sugar
  • 4 tablespoons milk
  • 2 eggs
  • 2 tablespoons corn oil
  • 5 tablespoons corn kernels
  • 6 tablespoons grated cheese or chopped sliced cheese
  • 6 tablespoons chicken ham, roughly chopped
  • 1⁄2 cup Kellogg’s Corn Flakes
  • Salt and black pepper, to season

Method

  1. Grease the inside of a round tin about 22cm in diameter.
  2. In a large mixing bowl, whisk the flour and baking powder together to mix and aerate. Ina separate bowl or jug, beat the eggs, milk, sugar, salt and pepper together.
  3. Pour the egg mixture into the flour, and whisk until just combined. Switch the whisk for a spatula and fold in the ham, corn, cheese, spring onion and corn flakes. Once evenlydistributed, scrape into the prepared tin.
  4. Steam on a medium-high heat for 15-18 minutes, until risen and fully cooked through.
  5. Allow to cool slightly before slicing and serving.
