Celebrity Chef Cat Cora creates new lunch and dinner menus for Ocean Restaurant

Ocean Restaurant is undoubtedly one of my favourite restaurants in Singapore. Not only is the visual spectacle of the aquarium arresting when you first walk in, the food is absolutely divine.
Grab a table right by the glass panels and be enthralled by manta rays, schools of fish and sharks performing aquatic acrobatics before you as you tuck into a sumptuous meal from Ocean’s refreshed menu. Conceptualised by celebrity chef Cat Cora and Chef de Cuisine Yew Eng Tong, the new menu highlights the plethora of ingredients the sea provides mixed with a touch of Asian flavour.

Affordable set meals
A meal at Ocean doesn’t have to cost a fin and a tail, a three-course business set lunch is available from just $58 while a five-course leisure lunch is priced at $72.
For something a little more luxurious, the dinner set menus start from $128 for four-courses, $158 for six-courses and $208 for an eight-course meal.
One of the most impressive dishes from the six-course and eight-course lineup is Cora’s signature amuse-bouche, Ocean — Harmony of Sea Life. The assortment of raw, poached and smoked seafood truly work in harmony with sweet and refreshing elements like the watermelon sorbet.
Even though Ocean positions itself as a seafood restaurant, the meat dishes are outstanding as well. By the time I was served the last course before dessert, I was absolutely stuffed. Yet, I still managed to finish the Braised-Seared Beef Short Rib and Charred Grilled Wagyu Primecuts, a testament to how delicious the duo of meat was.

No Michelin, no problem
With the winners of Michelin Singapore announced last week, it was a genuine surprise that Ocean was not given the honour of a star. It fulfils all the criteria of a Michelin restaurant, including the quality of ingredients, skill in their preparation and the combination of flavours, level of creativity, value for money and consistency of culinary standards.
Perhaps with this refreshed menu, Ocean stands a better chance at being ranked in next year’s guide. Till then, I’m sure they’ll just keep swimming towards those stars.
