Ku De Ta presents its new menu by its new Executive Chef. Weekender was among the first two to taste

Ku De Ta Restaurant, famously located on the 57th floor at the SkyPark of Marina Bay Sands, presents a brand new a la carte menu from Nov 5, by new Executive Chef Frederic Faucheux.

I was honoured to be one of the first two people to taste the dishes on his new menu. With the balmy weather and the resplendent panoramic view of the city skyline and the Straits of Singapore all around, I truly felt as though I was dining in the clouds.

Heavenly & Artistic Food

What completed the deified impression was the heavenly food. The new menu retains Ku De Ta Restaurant’s modern Asian dining concept.

When my first platter of the tasting menu arrived, I was taken aback by its beauty. This may sound like an exaggeration but I assure you it’s not. It looked like a work of art, with three items arranged on a black ‘canvas’, complete with decorative flower petals.

The Oyster with Kombu Jelly and Ikura was fresh, gratifying and easily the best part of the first presentation, while the Softshell Crab Sushi Roll came a close second. Both certainly whet my appetite for more to come.

Best of East Meets West

The pan-fried Foie Gras was topped with Sake Jelly to mimic the pairing of a sweet wine with foie gras, typical in the chef’s home country. Unique and refreshing, it was effervescent to taste.

Other highlights include the Rack of Lamb with Walnut Jus – with mushrooms and fried sushi rice grains adding to the texture and flavour – and the Heirloom Tomato Salad that features a combination of sweet, spicy, and sour flavours. These are sure to please both Asian and Western palates.

Keep an eye out for more heavenly creations. Next year, Chef Faucheux will present a new lunch and weekend brunch menu.
