The latest collaboration between Loh Lik Ping of the Unlisted Collection and Aussie chef Clayton Wells billed by broadsheet The Weekend Australian as “Australia’s hottest chef” has been running at almost full service since opening in mid October. Diners can look forward to
Wells’ signature style of unusual food pairings and keeping them on their toes with frequent changes on the menu. A personal favourite is the Fremantle octopus, xo, red vinegar, ink & fennel puree for its unique blend of umami and tangy. With neighbours like popular
restaurant Nouri and watering-hole Jigger & Pony on Amoy Street , Blackwattle has to be able to hold its own, and it very well can.
