Newly-established The Providore Café showcases quality wares for you to have a good teatime

By Cheryl Chia

Apart from bringing quality goods and products into their grocery store at Tan Boon Liat Building, The Providore Café has opened its airy doors at Mandarin Gallery.

Started by the former owners of Jones the Grocer, Bruce Chapman and Robert Collick, the distinctly modern Australian joint serves some good nosh.

Experienced Chef

The café’s kitchen is headed by Chef Saffry Rahim, whose 20 years of culinary experience spans a wide spectrum of cuisines in top restaurant kitchens across Singapore and the United States.

“We have worked with Chef Rahim in the past, and he shares our passion and vision towards food,” says Bruce Chapman, co-founder and managing director of The Providore brand.

“When the idea of The Providore came to us, we couldn’t think of a better man for the job,” he says.

Sharing Portions

The extensive menu ensures something for everyone. We loved the Lobster Mac & Cheese ($22.50) with shaved fennel and dill baked in a cast-iron pan. The moreish quality of this dish left us asking for seconds.

The Tuna Tartare ($14.50) is a plate of fresh, raw tuna atop chopped avocados, and topped with a quail egg yolk. The Tomato Toasts ($14.50), with slow-cooked cherry tomatoes and meridith-marinated goat cheese and Meatballs ($18.50), should also be given a try.

There are also solid milkshakes and an assorted array of cakes, baked in-house with their very own products from The Providore.
They also carry vienoisseries from BAO, a bakery initiative by the former chef of Canele Patisserie Chocolaterie.

Future Plans

The owners plan to launch a brunch menu with dishes such as Ricotta Pancakes.

There are also plans to bring The Providore to Japan.
