3. BBQ French Quail, S$23.00

The French quail boasts a delightful crisp and smoky hint, which are achieved through the barbecue technique commonly found on the streets of Chengdu. It is first brushed with the signature chilli oil before it is grilled atop a bed of charcoal. Throughout the grilling process, the bird is brushed liberally with the chilli oil as well. When it is fully cooked, it is dusted with a blend of Sichuan spices. The golden-brown hue of the quail contrasts beautifully with the greens, pinks and yellows of its garnishes. This is a very flavorful dish!
