3. Lobster with Pumpkin Purée in hot stone pot, $28

Bubbling in a hot stone pot as it arrives at the table, this light and sweet pumpkin broth is flavoured with lobster stock and thickened with shark cartilage and fish maw – both of which have been slow cooked for 12 to 14 hours. This collagen-rich soup is filled with chunky pieces of lobster and served with a black garlic bread stick, which tastes good even on its own.
