Tantalising and unique in their own right, here are five delicacies to look out for if you ever visit these three prefectures.

4. Hida Beef Sushi at Takayama Old Town, Gifu Prefecture

Similar standing to Kobe’s, Hida beef is prized by the Takayama city and it is at Old Town will you find an array of beefy renditions such as buns, skewers and croquettes. We managed to snag the featured Hida Beef Sushi from a non-descript stall which apparently is extremely popular, touting long queues and selling out by the afternoon during peak seasons. Aside from the rice patties, the Hida beef was, for the lack of a better description, melt-in-the-mouth kind of good, where one wouldn’t expect that the thinly-sliced meats are capable of releasing a flood of savoury juices that true meat lovers will revel in.
