After navigating a long winding path on the second floor of One Fullerton, I found myself at the stunning UsQuBa.

The modern European grill and whisky bar has recently refreshed its menu, shifting its gaze from purely Scottish cuisine to a broader and decidedly more experimental European menu.

Regulars at the coveted watering hole will be pleased to know that UsQuBa’s enviable collection of illustrious single cask whiskies from famed Scottish distilleries and independent bottlers, remain a mainstay.

Seated by the window where ample natural light streamed in, I was blessed with a bird’s eye view of Marina Bay, leaving me curious to see how the scenery would be once night falls.

Here, a symphony of thoughtful food and whisky pairings await, with the following being our favourites:

1. Aberdeen Angus Steak Tartar ($25) and Glendronach 12 Years Old

At first glance, I’d mistakenly thought this was a ceviche served on a bed of burnt toast. Turns out, it was a glorious mix of arugula, radish, beetroot and beef chunks resting on a barley and bone marrow frittata.

The frittata’s gritty texture, when paired with the tender beef, made for a texturally delicious combination that disintegrated slowly in the mouth. The meaty flavour was well balanced by the sweet medium body of the Glendronach 12 Years.
