After navigating a long winding path on the second floor of One Fullerton, I found myself at the stunning UsQuBa.

The modern European grill and whisky bar has recently refreshed its menu, shifting its gaze from purely Scottish cuisine to a broader and decidedly more experimental European menu.

Regulars at the coveted watering hole will be pleased to know that UsQuBa's enviable collection of illustrious single cask whiskies from famed Scottish distilleries and independent bottlers, remain a mainstay.

Seated by the window where ample natural light streamed in, I was blessed with a bird's eye view of Marina Bay, leaving me curious to see how the scenery would be once night falls.

3. Japanese Yamaguchi Baby Chicken ($36) and Compass Box Spice Tree

Another popular creation from Chef Guven is the Japanese Yamaguchi Baby Chicken. The moist and tender fowl, though a little bland in terms of flavour, was nicely lifted by the accompanying seared foie gras.

The natural flavours, courtesy of the meat juices, were well complemented by the toasty and rich Compass Box Spice Tree, which had been aged in barrels with heavily toasted heads.
