After navigating a long winding path on the second floor of One Fullerton, I found myself at the stunning UsQuBa.

The modern European grill and whisky bar has recently refreshed its menu, shifting its gaze from purely Scottish cuisine to a broader and decidedly more experimental European menu.

Regulars at the coveted watering hole will be pleased to know that UsQuBa's enviable collection of illustrious single cask whiskies from famed Scottish distilleries and independent bottlers, remain a mainstay.

Seated by the window where ample natural light streamed in, I was blessed with a bird's eye view of Marina Bay, leaving me curious to see how the scenery would be once night falls.

Here, a symphony of thoughtful food and whisky pairings await, with the following being our favourites:

2. Tasting Of Lamb (good for two, $78) and Dalmore 15 Years Old

As one of the signatures — and it’s not hard to tell why — this dish is presented in a generous platter of Grilled Lamb with British Asparagus, Long Beans and Pumpkin-Flavoured Shepherd’s Pie.

The various elements came together nicely, with the comforting and pillow-soft Shepherd’s Pie being one of the best I’ve tried.

The Grilled Lamb was well-seasoned and flavourful to the last bite, surrendering any of its richness to the nutty, full-bodied Dalmore 15 Years.
