1. The Fullerton Hotel Singapore Presents AKI 秋 Afternoon Tea
Autumn arrives at The Courtyard with a two-month collaboration between The Fullerton Hotel Singapore and Makoto Arami—La Liste’s Pastry Talent of the Year 2025 and third-generation pâtissier from AMI Patisserie.
In place of the traditional scone, the bread course takes a Japanese turn: a Kinako & Matcha Tropézienne filled with bright yuzu jam, created exclusively for this collaboration. Expect European-Japanese signatures such as the AMI Signature Caviar Choux, alongside a thoughtfully curated ensemble that celebrates seasonality and premium ingredients.

2. MOGĀ Turns Two with a Globe-Trotting Cocktail Menu and a 1-for-1 Celebration Deal
At Pullman Singapore Hill Street, modern izakaya-inspired bar MOGĀ unveils “Kiyoko’s Journey”—a whimsical, storybook cocktail menu that follows one heroine across 12 cities. Each chapter is a drink; each pour, a playful cultural nod refracted through a Japanese lens.
Start in Mexico with “Graaape~” (S$26++), a Mexico-meets-Kyoho grape highball crafted with Volcán Blanco tequila, lime, and cilantro. Continue to Spain with the savoury “Head Down, Horns Forward” (S$26++), blending Ford’s Gin, mezcal, gazpacho mix, wasabi, and soda for a fiery kick. In Belgium, question everything with “Is It Biscoff?” (S$26++), a creamy indulgence of Diplomatico Rum, coco pop, lichiko salten, Biscoff syrup, and cream.
From there, Italy leans bittersweet and low-ABV with Campari, umeshu, and grapefruit; Turkey shakes up pistachio with white miso and bourbon; while India offers a soulful masala chai riff featuring Macallan 12.

3. Jade Presents ‘Through Wind and Fire’ in Collaboration with Guest Chef Daniel Koh
From 8 to 31 October 2025, Jade at The Fullerton Hotel Singapore will present Through Wind and Fire (风火走过岁月) — a commemorative tasting menu series created by celebrity guest chef Daniel Koh and Jade’s Chinese Executive Chef Leong Chee Yeng.
Honouring Singapore’s evolution, each course reflects a pivotal era in the nation’s history, blending Chef Koh’s modern Chinese cuisine infused with Western techniques and Chef Leong’s artistic precision. Their collaboration, built on over three decades of friendship, results in an elegant fusion of flavours and storytelling on the plate.
The menus unfold like chapters: a seafood starter inspired by Singapore’s early fishing village days; a hearty soup titled Fires of Resilience that pays tribute to wartime courage; and mains symbolising prosperity, such as Fragrant Oil Bath Australian Lobster with Tomato Arborio Rice Ragout and Braised Wagyu wrapped in Bean Curd Skin.
Desserts close on notes of nostalgia and optimism, from Milo Coconut Ice Shaving with Baked Vanilla Custard Bun at lunch to Sea Salt Nori Coconut Snowflake with Pearl Hill Pine Nut Cookie at dinner.
