For me, the appeal lies in how well the food and settings meld seamlessly with my dining experience. Colony nails it with its seafaring voyage theme.

 

Seafaring Culinary Journey

Alluding to the British-colonial heritage of the late-18th century, Colony is a picture of elegance with high ceilings and an eclectic mix of vintage and bespoke furniture.

Situated on the third level of The Ritz-Carlton Millenia and taking over the space previously occupied by Greenhouse, the charming restaurant is decorated with touches of modernity alongside old maps, photographs and postcards that reflect the nostalgia of a bygone era.

The voyage motif doesn’t end there. The restaurant’s eight different open-concept kitchens take on a narrative journey as well, bringing you the best of Chinese, Indian, Indonesian, Malaysian, Western and local dishes.

 

Cuisine Highlights

The Colony laksa with homemade lobster ball is freshly prepared à la minute.

 

With a mind-boggling variety of speciality kitchens indulging you with grilled meats, seafood, wok-fried delights and more, the best way to enjoy Colony’s offerings is to savour the main highlights of each station.

At the Grill & Rotisserie, have your foie gras pan-seared on the spot and served with a mini buttered toast — a melt-in-your-mouth pleasure with every bite. Other noteworthy dishes at this station include crispy Iberico suckling pig with Balinese spices, beer-battered cod fillet, beef and stout stew and grilled satay.

For an upscale version of the famous Asian noodle dish, try the Colony laksa with homemade lobster ball at the Steam Basket station. Freshly prepared à la minute, the laksa’s broth had the right balance of spice and coconut milk, while the lobster ball was juicy and toothsome.

Round off your meal at the Patisserie’s ‘live’ dessert station, where you can enjoy a delicate coconut milk crepe with rum and raisin filling.

Apart from these highlights, The Ice Bar also has a wide selection of fresh seafood, most notably freshly-shucked oysters.

 

Tableside Cocktails

Enjoy a specially-crafted cocktail at your tableside.

 

You can even have Colony’s resident mixologist handcraft a cocktail by your tableside. At $22 per glass, pick from thematic tipples such as “Long Journey”, “Bengal Brew” and the “Governor’s Invitation”, all created to mirror the passage taken from Great Britain to the East Indies.
